It’s Friday – the perfect day to share another cocktail recipe.

For those of you wishing to add a little splash of pink to your wedding, these cocktails are the perfect addition to your bar menu! Once again from the brilliant (or evil) mind of Rebecca D’Amato Kobus of Urban Flip Flops, this cocktail is summery and refreshing – perfect for toasting on your big day. And they are oh so easy to make!

Rebecca and I got to work with the lovey April from Tea America who created the pink rainbow desserts to go with these cocktails. April, who creates mini versions of classic American desserts, came up with these rhubarb and pineapple cream layered cakes to fit perfectly with Rebecca’s cocktails. These cocktails along with the mini desserts are the perfect splash of colour and fun if you are planning a wedding with a muted, natural colour scheme. Oh and they’re not only pretty to look at – they’re absolutely delicious too!

Rebecca created the popsicle’s using a recipe found on She Likes Food. You will need rhubarb, strawberries, sugar, honey and lime to create them before making the cocktails.

RHUBARB LIME STRAWBERRY POPSICLE FIZZ RECIPE

Instructions

  1. Place popsicle (or ice cubes) into a champagne flute
  2. Top up glass with Rose Sparkling Wine
  3. Garnish with a strawberry

No mixing, shaking, stirring… Nothing! Easiest cocktail ever and will definitely get your guests in the mood to dance the night away.
